Click on the name, and if you're not using something crummy like Lotus Notes, your email program should open, ready for your message.
Eventually, I may even alphabetize the list.
Keep in mind, some of these are business addresses (companies can read employees email and generally at least scan for keywords), or the kids may get to the email first (they may be swamper kids, but that doesn't doom them to be like their parents), so use proper netiquette till you know better!
